Baked Apple Sultana Topsy Turvy Turnover – Fire Pit Feasting 01
This was one of the most popular desserts we put out there and two slabs lasted no longer than four minutes between four of us, a feverish feasting on a par with the freakishly named “Sweet but Rotting Banana Bread”.
So what is so special about An apple turnover ? Not a lot actually, It is a sort of small, typically English individual pie or pasty, in which the filling is placed on one side of a piece of rolled-out pastry and the other side is then turned over’ to cover it. The term “turnover” is first recorded at the end of the eighteenth century: an old woman preparing her turnovers, commonly called apple-pies’ and finding that the problem of the filling just pissing out as the pastry rises all over the baking tray could be solved by “turning the apple pie over” (Sporting Magazine, 1798). A sweet spicy fruit filling is the norm.
What makes the Topsy Turvy Turnover so special is the ingredients and the method of preparation. Firstly, It’s all Vegan… obviously, secondly the apples are not cooked in the pie, they are baked on an open fire until absolute mush, then mixed with other filling ingredients to build flavour. Why cook the apples seperatly and then add them to the pastry ? Simple, to get a fast bake crisp crust on the pasty we cook it shorter (about 15 minutes? and on a higher gas mark so that the pastry crisps faster (260 degree). We do not need to wait for the filling to cook through as it is already baked, we just want the ingredients to mix in the pie.
Fancy a go at the Topsy Turvy Turnover ? the most simplest of simple baking..
First up , get a fire pit going and bake those apples. Choose large sweet cooking apples (they mush fast) wrap in foil twisting the top to stop juice leaking out, stoke the fire pit and burn the foil black.
To the spyful watchfuls, yes there are other interesting things cooking at the same time as the Apples on our fire, those are for other “fire peat feasting” recipes. see other posts.
Let the Apples cool completely and empty into a bowl over night in the fridge to allow the juice to separate ( this will mix with coconut and cocoa flakes in the ingredients mix.
One Day/Night later –
Empty the apple juice into a glass mixing tray and add the sultanas, cranberries (dried) coconut flakes, cocoa powder, vanilla essence, we borrowed a bottle of essence from a Starbucks (most kind – share in the community baking), sugar mix then add the apples in. top with more cocoa, coconut and sugar and put to one side.
Add after putting through the blender, the liquid contents (aquafaba) of one time of chick peas (in plain water NOT salted water) now spun white to 400g self raising flower, salt. Then roll out pastry.
Add the filling in long oblong block shapes and fold the pastry parcels. the put a baking trap on top and flip over so that the pastry is “turned over” and pierce the top of the turnover to allow the pastry to breathe during cooking.
Brush paint the top and sides with Soya milk to brown the crust then pop it in the oven and go do something less interesting instead for 15 minutes. gas at 260. If you want to gild the lily, you can sprinkle cinnamon and sugar along the top, we don’t but that does’nt mean you should’nt…
15 minutes later,. go back to the oven and hey presto it’s ready. Slice and serve with vegan dairy free and palm oil free ice cream, we found a Coconut everything free ice cream in Marks and Spencer’s food hall of all places.
PALM OIL – How can a product that harms animals be called VEGAN ?
The Question forms the answer, we would expect that no product whatever its origin, plant or animal derived that directly and deliberately causes harm to animals, drives hunting, fuels climate change, can ever be Vegan.
Where do you draw the line ? cash crops, biofuel diesel… Is the world stacked so highly against ethics to render all products at some level or another non vegan ? Does following a planet based diet and working for animal rights against exploitation constitute enough depth to be Vegan ? the debate rages..
Palm oil is everywhere, it’s in everything, corporations and large scaling Vegan food distribution and supply love it. New Converts to veganism appear to be dependent on it and defend it as a corner stone of there new found cruelty free epiphany even questioning vegan ethics and practices within the established community.
VEGANISM Modern root and definition
In November 1944, Donald Watson along with five other non-dairy vegetarians, including Elsie Shrigley, defined and drew up the founding basis for a modernised clear evolution of non-dairy vegetarianism and created the word Vegan to define practice and lifestyle. “Vegan” is built from the first three and last two letters of ‘vegetarian’. In the words of Donald Watson, it marked “the beginning and end of vegetarianism.”
Veganism was defined as “the principle of the emancipation of animals from exploitation by man, and to seek an end to the use of animals by man for food, commodities, work, hunting, vivisection, and by all other uses involving exploitation of animal life by man”.
The supporting Slogans for the expanding Vegan movement have since been further clarified by five rules of mindfulness and practice. the five rules are:
01 – For Compassion (Empathy and care in lifestyle choices)
02 – Non-Violence (pacifism for all species “thou shall not kill”)
03 – For People (With best Health and social responsibility in resource management considered)
04 – For the Planet (Free of greed and with the impact of animal agriculture on climate change carefully weighed )
05 – For the Animals (At all times in the best interests of the animal kingdom)
Palm oil, oil from the fruit of a palm tree might sound very vegan but when you compare the industry against the founding definition of Veganism and the core rules of mindfulness, we cannot see how it can ever be.
A slew of Vegetarian meddling in Vegan ethics has lead to extensive confusion as to how “Vegan” Palm oil can or could be.
As the fashionability of being “Vegan” grows so too does dilution of the practicing values of the vegan movement.
Vegans , becoming more and more frustrated with this dilution “authorising” the consumption of products that challenge the principles of Veganism simply because commercial globalised food manufacturing lace it in all processed foods. This and the normalising of cruelty have coined the term “apologetic vegan”.
The term “Apologetic Vegan” though is probably also wrong. Someone who does not follow the definition of Veganism can be challenged as simply being not Vegan. There are no options for the Vegan, like Honey on Sunday or a bit of Horse riding wont do any harm. There are no, I can’t check the ingredients, it wont hurt once or twice, so I will have it anyway etc…These are the principles of a vegetarian NOT the Vegan.
Who’s Who in the grey area between “Vegetarian” /”Vegan” ?
Palm oil and the consumption of it, though plant based cannot in any stretch of the imagination be Vegan as it conflicts directly with 4 of the 5 rules of mindfulness. Though Palm oil is as Vegan as a Monsanto sweet corn GM crop, it is plant based, though when taken in isolation back to the definition of Vegan, it does not make the grade.
As Vegans we must at all times look to the root definition of Veganism and check products in isolation against that definition and where any question lies in to the ethics of a product, seek an alternative or do without.
The point is that we do not live in a vegan world, and until we do we cannot be wholly vegan , what we must do though is to at all times strive to be as close to the pure root and meaning of veganism as is possible. Palm Oil is a clearly obvious non ethical product and the expectation is that all modern vegans would refuse to consume it.
Let’s look at Palm oil itself – Yes its plant based and it’s freely used in processed foods, makeup, household cleaners, toiletries, bio-diesel, but it carries a huge price that challenges the founding ethics of the modern vegan movement, concerns over deforestation, habitat destruction, loss of biodiversity, species extinction (Orangutans), and a slew of human rights violations in the devastation or deforestation clearings that Palm oil production leaves behind it on the ecological battlefield.
The impact of Palm oil production on its habitat has always been well known by the commercial producers, though it was not until Biruté Galdikas, one of the greatest scientists and primatologists of the 20th century, and founder of the Orangutan foundation international in 1986 voiced concerns over the impact of exploding Palm oil production that the issue started to gain Main press.
Biruté Mary Galdikas has spent more than 40 years living and studying the behaviour of orangutans inside the once pristine rainforest of Borneo, Indonesia.
The rainforests threatened by palm oil production are uniquely lush and diverse, housing over half of the world’s species of flora and fauna. In recent years, conflict palm oil harvesting has become the leading contributor to rainforest destruction.
Not only are wild orangutans displaced in the name of palm oil, but they are also killed as pests when they return to what’s left of their habitat. In addition to the environmental concerns, palm oil carries serious health implications.
According to the documentary Sumatra Burning, an estimated 60,000 locals suffer from breathing complications due to smog caused by deforestation. Palm oil laborers are compensated with next-to-nothing wages. Many native communities have tried to stand up to these exploitative corporations, only to be forced out of the discussion.
Unfortunately, it appears that many ethical vegan companies are not immune from corporate mal-governance. By using ingredients as destructive as palm oil, these businesses are essentially standing for profit above all else.
Palm oil companies do not have a good record of wthical conduct, offering financial remuneration of 100$ a head for the shooting of orangutans despite this being illegal under Malaysian and Indonesian laws of governance with regard to Palm Oil. Sign the below petition to stop this practice:
The Vegan Community often opens discussion on comparison between palm oil and commercial vegetable and grain crops, in the sense that the globalised scale production of any crop also falls in to the category of “vegetarian” not “vegan”and brings into question any farming that is not a small holding or organic. Certainly the impact of pesticides and harvesting GM anti insect crops are not vegan.
Whether or not globalised farming is or is not vegan does not change the non ethical status of Palm Oil in any way. To justify classing Palm Oil as vegan on the basis that other industries also require scrutiny and where to draw the line is an aside to the actual issue of Palm oil in itself vis-a-vis the Vegan ethic.
Where the Vegan encounters globalised farming he/she is faced with, in the pure vegan ethic, a potential need to set up and manage a small holding or work with local produce groups to exchange and barter for non pesticide cash crop farming, sounds harder than it actually is.

The extend in which Palm oil has been rolled in to product has been, to a large extent, concealed by using over 200 different names for Palm oil on ingredients to mask the extent of it’s usage and to trick consumers who concerned over its bad rep may overlook ingredients that have been “re-branded”.
Many food products have Palm Oil listed as ‘vegetable oil’ and in non food products, there is at last count over 200 alternate names for palm oil.
There is money in Palm oil, big money, enough to direct western governments to stop subsidizing local vegetable oils and to import foreign palm oils instead.

So to conclude, Palm oil cannot be Vegan, It is certainly Vegetarian, it is definitely Plant Based but it’s not Vegan when taken in isolation against the definition of Veganism as it does not satisfy or meet the definition or practicing code of Veganism.

a tutta fava sogno vegana ! The ultimate Sicilian stallion of the Vegan Kitchen, this one really cuts it like none before,. we had three helpings each and ended up groaning on the floor in a dreamy giggling haze after it was sooo good..

The Food Bank had already put this little lot out to go for recycling as soon as they turn , whatever doesn’t go to animal sanctuaries goes in the Dumpster at the end of it all. Though diminished and abandoned, the nourishing gifts of mother natures basket, wonderful fruits and vegetables rich still in all that is needed for a healthy balanced diet, provided the variety of perfect bits and bobs to put Italian cooking back on the menu, Vegan Style.
4 HOURS LATER:
Tonight is Italian night, Let’s do this yeah ! A simple green Bean Mediterranean dish, broad bean ,courgette x 2 or 3, onions (fried, use sh*t loads of them) and garlic (again sh*tloads of it), chestnut mushrooms a paper bag full, around say 20 ish.. (how big is your wok man ?), salt and black pepper, mixed herbs , 2 tea spoons of pesto, oregano, turmeric for colour (should have used paprika but just could not, for the life of me, find that massive bag we picked up at the food bank, where the hell was it ?? ) a tea spoon of sheese (vegan cream cheese) to thicken the sauce.
Now add violife vegan cheese broken up into pieces, yes a WHOLE pack ! and salted cashew nuts , yes a WHOLE bag !! (Get some nuts ! ) and cook through until all cheese has melted and get the tagliatelle on the boil..

London VEGAN events – EARTHLINGS / SLAUGHTERHOUSE Double Bill
This weekend , the heart of London , Leicester square , between the Angus Steakhouse and Burger King, become the staging ground for not one, but two animal rights protests.
“The Earthlings Experience” and “Close all Slaughterhouses” stopped tourists in their tracks with engaging street displays , speakers and running video content.
Many in the passing crowd’s that we engaged with had already made a switch to vegetarianism following increasing awareness over climate change issues caused by animal agriculture, and found that when further advised and made aware over the diary industry and fishing as staples feeds into the slaughter industry, many of them were asking themselves the BIG question …is vegetarianism enough? Should we go Vegan ?

What’s the problem with “Drinka Pinta Milka Day” and “Go to Work on an Egg” ?
Tourists from France were astounded to be informed over the exploding “vromage” industry (vegan non dairy cheese) and three French tourists opted to go for the “tofish and chips” up at Norman’s Coach and Horses ..
Both “Earthlings” and “Close all Slaughterhouses” clarify the issue in stark black and white. The truth that slaughter for meat is not euthanasia. It is not the merciful, pain-free, terror-free ending of a long, happy life in order to spare the victim from suffering a terrible incurable disease or unbearable pain. Slaughter is the terrifying and horribly painful ending of a short, anguished life full of disease, abuse, privation and fear and suffering, for millions of innocent, defenseless victims deliberately bred and reared to be destroyed for consumerism, a process that is carefully concealed from the public eye.
The Meat Industry and the Slaughterhouses will not close of their own accord, The purpose of protests like “The Earthlings Experience” and “Close all Slaughterhouses” is to open people’s eyes and hearts and seeking out their humanity to do the right thing, to reject , refuse and object to animal abuse.

VEGAN KITCHEN – The Humble CELERIAC – Celeriac Remoulade
The unsung hero of the vegetable world, oddly knobbly, bizarrely shaped celeriac loaded with a unique subtle, celery-like flavour, with nutty overtones, the Celeriac makes the perfect side.
So what do you do with it ? all the recipe books talk about mashing it, making it into patties and casseroles, soups etc,, we say “yawn”… why trouble with all that, there’s something much nicer we can do with our humble little celery turnip..
So what are we going to do with it ? well it’s called Celeriac Remoulade and it takes about 3 – 4 minutes to prepare and zero, YES ZERO !!! cooking… RESULT !
Any old celeriac will do, quite frankly, ours came from the food bank and was almost about to walk out of there on it’s own as it had been left to fester at the bottom of the perishables box for a good few weeks, the more elitist rags and recipes guides will tell you to: “Choose the best, the very very best, and to know what the very very best is you must choose a firm root that feels heavy for its size. Avoid those that are discoloured, after all no one likes a root that looks too earthy”… we ignored all that and went for “earthy”..
Don’t peel it, don’t wash it, don’t scrub it,. you don’t need to as when you grate it the skin piths on the grater and you can just compost or recyclee the outer pith (back to the planet or into the rabbit)…
So here we go,. preparation goes a little bit like this…(complete with variations in case your cupboards are missing some of the ingredients) :
one celeriac grated, no need to peel just discard the pith then one lime squeezed (alternative lemon if you want) , two teaspoons of pataks lime pickle: Lime (hot, medium) or (both are vegan) the Lime Mild Dip Pot
(alternative to lime pickle is dijon mustard. Two tablespoons mayola (vegan mayonnaise) one full pot of humous (no humous ? Just up the mayola) , salt , black pepper, garlic salt and mix it all up ..
Job done
So there you have it !! Simple as that ! ,. Celeriac Remoulade, it makes the perfect side for any dish, we served this up with a second side of grated carrots and a Chinese 5 spice maple syrup and sweet tamarind sauce stir fry (spice mushroom , pak choi (bok chay), ginger, mangetout, carrots, shallots, cashew nuts and fat sultanas) on jacket potato..
It serves well with any dish or is great on pitta bread as a snack. Or if you don;t have anything immediate to mind, pop it in a pot, scribble out a label and drop it in the fridge for later. good for 3 – 5 days.

ALL IN ONE VEGAN PASTY WITH (V) CREAM CHEESE TOPPER
Everyone loves a pasty right ? Quick , easy, filling, does the job.. the unfortunate thing about Pasties you find in the shops, is that they are full of crap, fructose corn-syrup, slaughtered animals (Buddha turns in the grave) and their so called by products, a truck load of chemicals to turn your guts and mind inside out…
Enter FISHINABOX,. we are going to give you the “idiots guide” to the healthy vegan pasty. There are distinct parts to the pastry,. the pastry itself, the filling, butter and dairy substitutes.
The OMG how to make your own butter recipe:
Melt the coconut oil in a saucepan, once melted remove from heat and return to room temperature, add vegetable oil and mix. Blend the Aquafaba until white and frothy. Add the oil mix to the blender and mix a little in at a time until all mixed in the blender, then add apple cider vinegar and blend again. taste check, does it need salt ? add it so and finally add the turmeric to give it a butter colour. last step pop it in the fridge uncovered overnight and there’s your butter.
Secret Ingredient: AQUAFABA : Chick Peas in Water create Aquafaba, make sure your Chick Peas are in Water though NOT salted Water as salted chick Pea water will not work.
(Aquafaba can be used to replace egg whites in many sweet and savory recipes. Its unique mix of starches, proteins, and other soluble plant solids which have migrated from the seeds to the water during the cooking process gives aquafaba a wide spectrum of emulsifying, foaming, binding, gelatinizing and thickening properties.)
Check the tin before you buy ! “in water” NOT “in salted water”
That’s the butter done, next up we get the pastry down and done. Which involves the first four ingredients measured in the mixing bowl. if you want to give your Pasty that puffed up feel, thrown in some more Aquafaba like we made for the butter (shown in the above image).
Once the pastry is rolled out you can just add your filling, we use a simple combination of vegetables (parsnips, swede, broccoli, kale, carrots, potato, anything you have basically !) steamed mixed with (fructose corn syrup free) baked beans (yes baked beans !!). you can also add pre soak soya chunks (soak in tamarind sauce if you want to a bit of a kick) as an option.
When the pasties is ready, paint it with soy milk to brown the top and pop it in the oven for 15 minutes on 220 degrees. then take it out and pack the top fold with “Sheese” Dairy Free Cream Cheese (available at Holland and Barrett www.hollandandbarrett.com) add ground black pepper pop it back in the oven for 5 minutes and job done.
So there we go, a recipe for Butter and a recipe for the best darn cruelty free pasty out there. This pasty costs around 40 pence to make on our credit crunch budget. which is ,.. ummm, doing the maths… ok, around £2.10 cheaper than your regular pasty of animal abuse and death #justsayin #govegan

As the Studio sessions ran, the musicians writers and photographers worked at full tilt, the oven went on and undoubtedly we began to fuse our culinary ideas.. out of that came the Kofteeh Pasty, a great vegan alternative to snack food on the move, capturing unmistakably, all the flavour and spice of the kofteeh Kebab, but this time Cruelty Free Vegan, just the way we like it…
So if you are thinking of a day around town , picnic, festival or just something easy and super quick for lunch then ditch the Kebab and grab a Kofteeh Pasty.
Drawing on the mysterious middle east’s long history of culinary excellence, Here’s the “how to..”
To start off, we drew on the classic Vegan Vegetable Pasty for the base of the recipe (NOTE – see our vegetable pasty recipe as an alternative if eastern spicy wonders are a bit too much for you)…
Mix the Middle eastern kofteeh spices ( tomato puree, garlic puree, coriander leaf, mint, lime juice, chilli powder, garam masala, {made from coriander/cumin/black pepper/clove/ginger} lemon juice, ginger) Then add spice mix to the vegetables and the mock “meat” alternative.
To create the texture of the “mock” we used Holland and Barretts Vegan “chorizo” chunks , still palm oil free thankfully ! (www.hollandandbarrett.com ) mixed with shallots ,red onion, butternut squash (gourds), cauliflower heads, yellow split peas (soaked and pre-cooked, parsnips, swede and a cheeky cheat of a few spoons of pickle sauce (Branston’s style) . Get it in the pan and cook it up, then leave to cool on the side.
You can also add these options if you have them: leeks, mint, parsley .
Don’t forget the butter !!! … oh I almost forgot.. how to make the Vegan cruelty free Butter…….
Next Prepare the pastry , roll out, add the filling, fold, add design (air holes to let the pastry breathe) and pop in the oven for 15-20 mins on 220 degrees and its done.

This week on April Fools Day Miami and London united to rally against Lolita the Orca’s ongoing Captivity.
Lolita has become iconic in the fight against Cetacean captivity (Dolphins, Whales etc) for base and degrading entertainment and the general awareness through investigations such as “Blackfish” that Cetacean Captivity is the highest form of psychological torture that can be committed against a species that functions primarily around emotional family bonds. Lolita has been kept in a tank that violates the Animal and Plant Health Inspection Service (APHIS) standards for size requirements. APHIS is an operating unit of the United States Department of Agriculture (USDA).
In November 2011 Animal Legal Defense Fund (ALDF), PETA, and three individuals filed a lawsuit against the National Marine Fisheries Service (NMFS) to end the exclusion of Lolita from the Endangered Species Act (ESA) of the Pacific Northwest’s Southern Resident Orcas. NMFS reviewed ALDF’s joint petition, along with the thousands of comments submitted by the public and found the petition merited. In February 2015, the NOAA announced it would issue a rule to include Lolita in the endangered species list. Although the Orca population that she was taken from is listed as endangered, as a captive animal, Lolita was specifically exempted from this classification.
Lolita has been reported to have raised 160 million Dollars in Profits for the Miami Seaquarium through there Orca entertainment program. There is no evidence, despite Global Animal Rights assertions that the reason for Lolita’s exemption, from being classified as endangered, is in any way linked to her ability to draw profits for the organisation.
Lolita is Miami Seaquarium’s main attraction. She has attracted global attention from animal rights groups and anti-captivity activists. In 2003 Lolita was the subject of the documentary Lolita: Slave to Entertainment in which many anti-captivity activists, most notably Ric O’Barry (former Flipper Dolphin trainer), argue against her current conditions and express a hope that she may be re-introduced to the wild. Protesters assert that the Seaquarium is treating Lolita cruelly.
Lolita is approximately 21 feet long and 7,000 pounds. Per the guidelines, the tank for a killer whale the size of Lolita must be a minimum of 48 feet wide in either direction with a straight line of travel across the middle. Lolita’s tank is only 35 feet wide from the front wall to the slide out (work island) barrier*. It is 20 feet deep at the deepest point and a mere 12 feet deep around the edges.

Global Animal Rights groups and Charities united to coordinated protests to raise awareness over the plight of Lolita’s on going captivity at Miami Seaquarium and Arle Captial in London.
Arle Capital Investments have a direct link in the chain which keeps Lolita captive at Miami Seaquarium.
Palace Entertainments, owners of Miami Seaquarium and Lolita, is the US operating subsidiary of Parques Reunidos – a European based company. They are owned by Candover, a private equity fund which is managed by London-based Arle Capital Investments.
The Rally heavily supported by Mainstream Media, With the Independent and Daily Express running full page spreads on the campaign, and the Sunday Times investigative journalism, was a family friendly event intended to urge Miami Seaquarium and Arle Capital to allow Lolita to retire to a safe sanctuary to live out the remainder of her years and live as an Orca truly should be-FREE. Wilfred Owen’s poetry has been reworked into a vast range of different formats. some of the most moving of which were Benjamin Britten’s use of eight of Wilfred Owen’s poems into his War Requiem, along with words from the Latin Mass for the Dead (Missa pro Defunctis).
Derek Jarman also adapted it for the screen in 1988, with the 1963 recording as the soundtrack. Though these were striking they only touched on Owen’s works.
Penny Rimbaud’s intense and thorough exploration of the works of Wilfred Owen allows the listener to journey deeper into Owen’s works, the order of the poems , the haunting almost hypnotising presentation and audio setting push back the air around you creating almost a sense of silence that reaches out like shadow before pouring emotion into the space around you.
The remastering has been done, the recordings flawless, the CD and photobook hailing back to Owen’s home and surround area, quite stunning. The job could not have been done better and we would recommend all take a serious looking at the below interview and sales links and pick up a copy of the finished product before stocks run out:
What passing-bells for these who die as cattle?
Only the monstrous anger of the guns.
Only the stuttering rifles’ rapid rattle
Can patter out their hasty orisons.

On 11 November 1985, Owen was one of the 16 Great War poets commemorated on a slate stone unveiled in Westminster Abbey’s Poet’s Corner.
The inscription on the stone is taken from Owen’s “Preface” to his poems: “My subject is War, and the pity of War. The Poetry is in the pity.”
Where today we are so very desensitised and conditioned to the daily existence of mindless fruitless destruction, Where children are born to “order” , fodder for the battlefield, a death before life, a soldier a killer before being a child, where mothers wombs are sacked by Governments out of so called duty to the nation. Before life even begins they are consigned to death.
The destruction of men, as pigs to slaughter, whether they be English, French, German or anything else, a prerequisite of so called of civilisation. It is a crime of hate, a crime of power and corruption and a crime of society to take the innocent, and all that is left when done,. if we are able to feel a mother’s loss, is that breathless wheezing feeling of sorrow and compassion caused by living the sufferings and misfortunes of others.
Penny Rimbaud’s “What Passing bells” presents the pity in Owen’s works at the deepest most comprehensive and accessible level to date in the presentation of this writer’s works.
